Like the rest of Di Giampaolo's varieties, Levante is attributed to a southern European wind. The Levante is a warm wind of medium strength. It originates in the western Mediterranean Sea on the Spanish coast, where it blows from east to west.
Fittingly, these excellent espresso beans. A medium roast and pleasantly aromatic taste characterize the Levante espresso. The natural decaffeination process does not detract from the beans. A full, textured body and notes of fresh fruit and spice await. Slight hints of white pepper flower are also noticeable in the finish. The medium strength roast and the containing robusta beans take away the acidity of this espresso, which makes it taste very pleasant even as a simple espresso. The decaffeination method used for Di Giampaolo Levante is the dichloromethane method. In this method, the beans are placed in a basin filled with the solvent for several hours. Due to diffusion, the caffeine is first carried to the surface of the beans and then absorbed by the organic chemical compound. Dichloromethane is 100% food grade and the result of the decaffeination process is therefore high quality and does not lose any quality. Regular laboratory analysis confirms the purity of this process, as well as the low caffeine content of less than 0.1%.
