Mascobado is what the farmers in the Philippines call their traditional whole cane sugar. It is produced by hand by pressing the sweet juice from the sugar cane and heating it slowly. The thickened sugar cane juice is then filtered and cooled with constant stirring. This is an old and traditional process. This preserves the valuable minerals and the full flavor. As unrefined sugar, it does not crystallize as regularly as industrially produced white sugar. The somewhat firmer consistency is a sign of quality.
Landless laborers have become successful organic farmers. The Alter Trade Corporation (ATC) paved their way to fair trade and supported their conversion to organic anabu. Today, their mascobado generates revenues from which they and their families can live well.
With their fair trade premium, they were able to purchase their own sugar mill, in which they process their harvest themselves. This enables them to meet the growing demand from Europe on their own. For a few years now, they have also been taking care of the trees planted by GEPA as a contribution to climate protection. They serve as windbreaks, provide mulch to improve soil quality, store CO2 and bring additional income to the families.
